Lactose intolerant people always prefer ghee over butter as butter contains high amounts of lactose. If you use butter on cakes, lasagnas, or any cooked dishes, you can replace it with ghee. Though ghee is one type of butter, it is a clarified one. It goes through the separation process of liquid fats and milk solids. The milk solids are after that entirely removed to make ghee lactose-free.
However, the fat does not go away after the clarification but remains by a tiny percentage. Thus, it is safe to use ghee as a substitute for butter.
The taste, smell, and color of butter and ghee are different. While the smell of butter is like milk, the smell of ghee is unique and pleasant. The texture of ghee is not slippery like butter. Also, if you are allergic to sugar lactose and protein casein that milk solids contain, you can use ghee.
