Butter and ghee- both are made from cow milk and are deemed to be high in protein. But many people don’t like butter for plenty of reasons. Some don’t eat butter because of the amount of fat it contains. Hence they substitute ghee for butter.

When talking about ghee as a substitute for butter, ghee is a better alternative since it does not contain as much fat as butter does. Ghee is purely organic and can be eaten with many meals in many ways. But so is butter. Hence, what is it about ghee that makes it a better substitute for butter? Let’s learn.  

Why Substitute Ghee for Butter?

Lactose intolerant people always prefer ghee over butter as butter contains high amounts of lactose. If you use butter on cakes, lasagnas, or any cooked dishes, you can replace it with ghee. Though ghee is one type of butter, it is a clarified one. It goes through the separation process of liquid fats and milk solids. The milk solids are after that entirely removed to make ghee lactose-free.

However, the fat does not go away after the clarification but remains by a tiny percentage. Thus, it is safe to use ghee as a substitute for butter.

The taste, smell, and color of butter and ghee are different. While the smell of butter is like milk, the smell of ghee is unique and pleasant. The texture of ghee is not slippery like butter. Also, if you are allergic to sugar lactose and protein casein that milk solids contain, you can use ghee.

  • Ghee does not get burned as quickly as butter due to its high smoke point. So, you can cook it at a low temperature for longer duration ghee is a better bait.
