Ingredients:

For Marinating the Chicken:

  • 500 grams of boneless chicken pieces (cut into bite-sized cubes)
  • 1/2 cup yogurt 
  • One tablespoon of ginger-garlic Paste
  • 1/2 teaspoon turmeric powder
  • One teaspoon of Red chili powder 
  • Salt to taste

For the Roasting Paste:

  • 10-12 dried red chilies (adjust to your spice preference, soak them in warm water for 15-20 minutes)
  • One teaspoon cumin seeds
  • One teaspoon of black peppercorns
  • 1/2 teaspoon fenugreek seeds (methi)
  • 5-6 cloves of garlic
  • 1-inch piece of ginger
  • Two tablespoons ghee (clarified butter)
  • Salt to taste

For Tempering:

  • Two tablespoons Milkio grass-fed ghee
  • One teaspoon of mustard seeds
  • A few curry leaves
  • 2-3 dried red chilies (optional for garnish)
  • Chopped fresh coriander leaves for garnish

Instructions:

Marinating the Chicken:

  • Combine the yogurt, ginger-garlic Paste, red chili powder, and salt in a bowl.
  • Add the chicken pieces to the marinade. Coat them well. Let it marinate for at least 30 minutes, but longer is better (up to 4 hours) in the refrigerator.

Preparing the Roasting Masala Paste:

  • In a blender, add the soaked dried red chilies (remove the seeds for a milder taste), cumin seeds, black peppercorns, fenugreek seeds, garlic, and ginger.
  • Blend until you get a smooth paste, adding a little water if needed.

Cooking the Chicken:

  • Heat Milkio’s ghee and vegetable oil in a large, heavy-bottomed pan or skillet.
  • Add the marinated chicken pieces until they are browned and cooked through. Remove the chicken from the pan. Now, set it aside.

Roasting the spices Paste:

  • Add the roasting masala paste to the same pan and cook it on low heat until it thickens and releases oil. This may take about 10-15 minutes.
  • Stir continuously to prevent burning.

Combining the Chicken and Masala:

  • Once the masala paste is well-roasted, add the cooked chicken back to the pan. Mix well so that the chicken pieces get the spice paste. Cook for a few more minutes.

Tempering:

  • In a separate small pan, heat two tablespoons of ghee for tempering. Add mustard seeds and let them splutter.
  • Pour this tempering over the chicken ghee roast.

Garnish and Serve:

  • Garnish with chopped fresh coriander leaves.
  • Your chicken ghee roast is ready to serve. 

Note: Adjust the dish’s spiciness by controlling the number of red chilies you use. Chicken ghee roast can be pretty spicy, so tailor it to your preferences.
