Ingredients:

  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • ½ cup buckwheat flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • 4 eggs, separated

  • 2 cups buttermilk for making the batter.

Instructions:

  • Preheat the waffle iron as per the instructions shared by the manufacturer.
  • Take a big bowl and mix the flour, baking soda, baking powder & salt.
  • In another bowl, beat the egg yolks, ghee, and milk until the mix becomes foamy.
  • In a small bowl beat the egg whites: you may use an electric mixer until firm peaks form.
  • Pour the milk mix into the dry components, and keep on stirring until they get well-mixed.
  • Use a spatula, and fold the egg whites gently until no white streaks are visible.
  • Brush the waffle iron with ghee and pour about a cup of batter for every waffle.
  • Close the iron and keep on baking according to directions.
  • Remove and serve with maple syrup and ghee.
