Ghee roasted potatoes: Instructions

  • You have to preheat the oven to 230° C.
  • Rinse the potatoes carefully before chopping them into chunks. Place potatoes in a large pot and add cold water to the potatoes. Add one tablespoon of salt.
  • Bring to a gentle simmer and allow cooking for 6 minutes. The potatoes should be well-cooked at this point, soft on the outside but slightly firm inside. Drain the potatoes and keep them aside to get cooled.
  • While the potatoes are getting cooled, add ghee, rosemary, thyme, and a pinch of salt and pepper to a saucepan and warm until melted.
