Can you reuse ghee for frying? Is it a healthy habit or we should stay refrained?

We often use leftover ghee for further use in cooking. Do you reuse ghee for frying? Don’t you find it a cooking fix especially when you have some leftover ghee in a wok?

  • Traditional Culinary Wisdom: With a history deeply rooted in Ayurveda and traditional cooking practices, ghee has been trusted for generations, signifying its safety and suitability for various culinary applications, including frying.

Can we reheat ghee?

Ideally, we should not reheat any oil, but as ghee offers a higher smoking point than any cooking oil, the stability of ghee temperature is a bit higher than other low-smoke cooking oils. If we reheat ghee for everyday cooking where the temperature remains within the range of 266 – 284 degrees Fahrenheit, it remains within the safe range and may not cause much harm for the health.  If you are wondering, can you reuse ghee for frying, the answer is no, but yes, for low-temperature cooking or drizzling.

However, reheating ghee for everyday cooking is strictly limited to grass-fed ghee.  Only grass-fed ghee offers high smoke points and can offer food safety.

Is it possible to reuse burnt ghee?

In terms of health, burned ghee is not friendly for health if you plan to use it for frying, roasting, or slow cooking.  However, you can use it as a taste enhancer or seasoning and mix a tablespoon of yogurt. The smell of yogurt can musk the burned flavor of the dairy.  Also, the yogurt can absorb the excess heat of cooking and keep the burned ghee safer for use in the cooking process.

How to reuse leftover ghee safely?

Reusing leftover ghee can be safe if done properly. Here’s a safe way to reuse leftover ghee:

  • Strain and Store: After frying, strain the leftover ghee using a fine mesh strainer to remove any food particles. Store it in a clean, airtight container.
  • Inspect for Spoilage: Before reuse, check the ghee for any signs of spoilage. If it has an off smell, unusual color, or shows any signs of mold, discard it immediately. Good ghee should have a pleasant aroma and a golden color.
  • Avoid Overheating: To maintain its quality, avoid overheating the leftover ghee during reuse. High temperatures can cause the ghee to break down and become rancid. Use it on low to medium heat settings.
  • Limited Reuse: Limit the number of times you reuse ghee. Each time it’s heated and cooled, its quality diminishes. Reusing it excessively might compromise its taste and safety.
  • Proper Storage: Keep the container tightly sealed and store the ghee in a cool, dark place away from direct sunlight or heat. This helps preserve the quality of the ghee for a longer period.
