Ghee from butter recipe: the process of cooking

  • Add about a pound of unsalted butter to a small pot with a heavy bottom and cook against low heat. Once the butter is completely melted, it will start to simmer, and you’ll see the ghee gets separated into three successive layers.
  • Foam forms on the top, stumbling slightly, which means water evaporates from the melted butter.  You need to skim that off with a spoon as many times as you need to do so. As the ghee gets cooked, that foam gradually turns into clear froths. The butterfat’s middle layer becomes luminous. You will start observing the milk solids sludging and sticking at the bottom of the crockpot.
  • After 25-30 minutes, your ghee should be done. Please turn off the heat, and let it be cool and stable for a couple of minutes. Then it would be best if you strain it into a glass storage container. The ghee will look opaque, and it will take the color of light-yellow as it gets settled.
