Eggs Poached in a Spiced Tomato Sauce with Ghee [Shakshouka]

Egg recipes are always tasty and wholesome.  You can have it anytime you like. For a quick breakfast menu, it’s an ideal Keto recipe you can try anytime.

Shakshouka dish looks like an egg pizza, doesn’t it? The combination of eggs and fresh ripe tomatoes is refreshingly awesome for taste buds and seemingly looks appetizing too.

Roby and I enjoy this popular Middle Eastern dish often because it’s easy to make (one-pan meal) and it supports our keto meal plan.

Shakshouka recipe is made by poaching eggs in a spiced tomato sauce. It’s the perfect any time keto-friendly meal.

Ingredients:

  • Milkio grass fed ghee: 2 teaspoons. The creamy texture will add excellent flavor and rich cramy texture to your dish.
  • Vegetables: 2 small chopped onions, 1 green bell pepper, 2 minced garlic cloves.
  • Spices: coriander, cumin, paprika – a blend of three warm North African flavors will make it delicious.
  • You may add shakshuka spice.  Also, you may  add a pinch of red pepper flakes or cayenne pepper.
  • Tomatoes : 6 chopped vine ripe tomatoes and ½ cup of tomato sauce.
  • Alternativly, you can also replace the fresh tomatoes with 1 28-ounce can of whole tomatoes or 6 cups of chopped tomatoes from a can with their juices.
  • Eggs: 6 large eggs (raw).
  • Garnishing: it’s optional, but you may add fresh chopped parsley and mint just before serving. The herbs will add freshness and a pop of color.
How to cook
  • When you prepare this dish, start by cooking onions until they turn golden. Next add garlic, serrano pepper, and red bell pepper.
  • Once all the veggies turn nice and soft, add tomatoes.
  • Simmer the veggies until the sauce becomes nice and thick.
  • Spice that sauce and gently crack eggs into your skillet.
  • If you’re trying to make the dish look fancy, crack your eggs in a bowl and then gently slide them into the skillet. If you have broken the yolk, you can just use another egg (and eat the broken egg yolk egg separately).
  • Now cover your skillet until the eggs are cooked to your liking, sprinkle with a little cilantro and devour.
