Ghee originated from India, where the heat and humid climate is not favorable for storing butter for extended periods. But when that butter is boiled until the moisture evaporates and the milk solids are removed to make ghee, it retains a long shelf life. For thousands of years, ghee has been featured in Indian recipes, as well as in Pakistani and Middle Eastern recipes.
