Al Harees Using Oatmeal ghee

“HAREES” is a delicious meat-based non-veg dish, highly popular in UAE during Ramadan. However, Al Harees using oatmeal ghee is a wonderful Ramadan staple you can cook anytime.

It’s healthy, tasty, and extremely easy to cook. It is a meat-based porridge which also works as a filler food.

Although almost like the Armenian harissa, Al Harees using oatmeal ghee is more of a jellylike dumpling than a mere porridge. Although Al Harees was once an ethnic dish specifically in Arab countries, nowadays, you can find the food on the menu of some Arabic restaurants in Abu Dhabi, Dubai, and Middle Eastern countries.

The History of Al Harees recipe

Cooking Al Harees using oatmeal ghee recipe in Middle Eastern Cuisine is a custom during the festive month of Ramadan. The recipe is popular in the Arabian Gulf region.

It is a hearty, slow-cooked porridge-like dish made from a combination of wheat and meat, often chicken or lamb, and flavored with various spices.

While the traditional recipe for Al Harees does not typically use oatmeal or ghee, the dish has evolved to include variations incorporating different ingredients. Let’s explore the history and adaptation of Al Harees with an oatmeal and ghee recipe.

Traditional Al Harees:

  • The origins of Al Harees can be traced back to the Arabian Peninsula, where it has been prepared for centuries, especially during the holy month of Ramadan and other special occasions.
  • Traditional Al Harees is made by soaking whole wheat grains overnight and then slow-cooking them with meat (usually chicken or lamb) in a large pot. The mixture is continuously stirred and simmered for several hours until it transforms into a thick, smooth, porridge-like consistency.
  • The dish is traditionally flavored with only a few spices, such as cardamom and cloves. It is often sweetened with sugar or honey.

Oatmeal and Ghee Variation: Al Harees using oatmeal ghee

  • The use of oatmeal and ghee in Al Harees is not part of the original recipe. Still, it represents a modern variation influenced by changing dietary preferences and the availability of ingredients.
  • Oatmeal may be used in place of or in addition to wheat for Al Harees, creating a different texture and flavor profile. It’s often chosen for its health benefits and gluten-free properties.
  • Ghee, a clarified butter widely used in Middle Eastern and Indian cuisine, is sometimes incorporated into Al Harees for its rich, buttery flavor and ability to enhance the overall taste and richness of the dish.

However, you can try this delicious meat recipe at home. It is a slow cooking process; hence you should choose an oil with the highest smoke point.

Adding oatmeal to it can increase its health benefits in a natural, savory way. One of the great advantages of cooking Al Harees using oatmeal ghee is your liberty to choose the meat: you can cook Harees with lamb, mutton, and beef, as well as with chicken.

Ingredients for Al Harees

  • Oatmeal: 3 cups
  • 1 small onion: finely chopped
  • Cinnamon: 1 small stick
  • Water: 1.5 liters (6 cups approximately)
  • Salt: as needed
  • Black pepper: 1/4th teaspoon
  • Cinnamon powder: 1/2nd teaspoons
  • Milkio’s organic grass-fed ghee: 4 tablespoons.
  • Meat: chicken/lamb/beef (as opted)

Instructions for cooking Al Harees

  • Take a large pot. You may take a pot that has a thick bottom.
  • In that large pot, add the meat of your choice.
  • Now add sliced onion, cinnamon stick, and water.
  • Bring the mix to a boil and cook continuously.
  • Let the mix become tender.
  • Once done, it is the stock you have prepared.
  • Once it gets prepared, keep it aside.
  • Remove meat/chicken from the broth and finely chop the meat/chicken.
  • Now use a strainer.
  • You need to drain the ready stock into a large pot.
  • Add Milkio organic grass-fed ghee to the pot.
  • Let the ghee be heated till it becomes completely translucent.
  • Add shredded meat/chicken, the 3 cups of Quaker oats, salt, pepper, and cinnamon to the melted ghee.
  • Keep on stirring using a whisk.
  • Add more water if necessary, but slowly, not at a time.
  • Bring the broth to a boil and stir every 5 -6 minutes.
  • You may add more boiling water if necessary.
  • You need to cook for about 40-45 minutes.
  • Now, you can add 1-2 spoonful of Milkio’s organic grass-fed Ghee, stir, and then serve the dish.

You have to be attentive while cooking Harees. If you keep stirring the item every few minutes, there is a fair chance it will not get stuck to the pot and get overcooked. The Al Harees using oatmeal ghee is prone to get overcooked easily, so you have to be extra careful.

Enjoy your Al Harees using Oatmeal ghee and Milkio’s Ghee. It is good for patients suffering from chronic cholesterol and cardio issues.
