Can ghee replace shortening? Yes, ghee can be used as a replacement for shortening in many recipes. Both ghee and shortening are solid at room temperature and have a high smoke point, making them suitable for high-heat cooking methods such as sautéing, baking, and frying.

Additionally, ghee is made from butter, which makes it suitable for people with lactose intolerance or casein sensitivities. Shortening, on the other hand, is a hydrogenated oil product and is not considered a natural ingredient.

Usually, shortenings are not shelf-stable. You can preserve shortening at room temperature for up to 3-4 months.  But when it is ghee, ghee is a storage stable dairy oil and a healthy seasoning.
