Enjoy Ghee rice with Milkio Grass fed ghee

The most delicious and aromatic cooked Rice, which goes well with Chicken curry or Mutton curry. Ghee rice is a great dish to accompany any type of curry on any occasion, festive or ordinary. It is a delicious and simple rice which is perfect for packed lunches and picnics. Mostly served with raita, ghee rice is an interesting lunch/dinner recipe. It is easy-to-make and would be loved by kids. You can pair it with Rajma, Chole and even Kadhi Pakora. Make this delicious rice recipe for your family and friends and impress them with your culinary skills.

Ghee Rice with Milkio Ghee

Ingredients

  1. Basmati Rice, washed in water and drained well- 2 cups
  2. Water- 4 cups
  3. Onion, large cut thin lengthwise- 1
  4. Bay leaves, fresh or dry- 2
  5. Milkio Ghee – 4 tbsp.
  6. Salt- ¾ tsp.

To Grind

  1. Fresh ginger, chopped- 1 inch slice
  2. Fresh garlic chopped-3 cloves
  3. Green chilies, chopped- 3
  4. Whole cardamom-2
  5. Whole cloves-2
  6. Cinnamon- 1 inch slice

Other Ingredients for Garnish   

  1. Onions, cut thin lengthwise- 2
  2. Milkio Ghee – enough for frying onion
  3. Cashew nuts- 10
  4. Raisins, roasted in 1 tsp. ghee- 1 tbsp.
  5. Cilantro, chopped- to garnish

Cooking Instructions

  1. Grind the above mentioned ingredients ‘to grind’ in a blender and keep aside.
  2. Place a saucepan over medium heat, add the Milkio ghee. 
  3. To the Milkio ghee, add the onions, salt, bay leaves, sauté until the onions turn translucent.
  4. Add the ground mixture, sauté until the raw smell of the ginger/garlic goes away- about 3 minutes.
  5. Add the rice to this and sauté in ghee for about 3 to 4 minutes. Don’t brown or over roast the rice.
  6. Add 4 cups water. 
  7. Cover the saucepan with its lid and cook for 20 minutes till the water has dried off. 
  8. Open the lid, using a spatula give the rice a mix and keep aside covered. 
  9. Fry the onions in Milkio ghee until golden brown and transfer to a paper towel. 
  10. Roast cashew nuts in the oil used for frying onion until golden, keep aside in a paper towel. 
  11. Roast Raisins in oil till it bubbles up, keep aside.
  12. Garnish the cooked rice with fried onions, roasted cashew nuts , roasted raisins and cilantro.
  13. Keep covered for a few more minutes. 
  14. Serve warm with your favorite veg or non-veg dish.
