Ghee Rice with Milkio Ghee

Ingredients

  1. Basmati Rice, well-washed in lukewarm water and drained well – 2 cups
  2. Water- 4 cups
  3. Onion, large cut thin lengthways- 1
  4. Bay leaves, fresh or dry – 2
  5. Milkio Ghee – 4 tbsp.
  6. Salt- as needed.

To Grind

  1. Fresh 1 slice of ginger, chopped- 1 inch around
  2. Fresh garlic 3 cloves-chopped
  3. Green chilies-3-4, chopped
  4. Whole cardamom-2
  5. Whole cloves-2
  6. Cinnamon- 1 inch slice

Other Ingredients for Garnish   

  1. Onions, cut thin lengthwise- 2
  2. Milkio Ghee – as needed to fry chopped onion
  3. Cashew nuts- 10
  4. Raisins, roasted in 1 tsp.
  5. Ghee- 1 tbsp.
  6. Cilantro, chopped- to garnish

Cooking Instructions

  1. Grind the aforementioned ingredients in a blender and once done, keep aside.
  2. Place a saucepan over medium heat: allow to get it hot and then add Milkio ghee in it.
  3. Once the Milkio ghee in saucepan gets heated, add the onions, salt, bay leaves, and keep on sautéing until the onions turn translucent.
  4. Add the ground mixture, keep on sautéing until the raw smell of the ginger/garlic goes off- about 3 minutes time will be needed.
  5. Add the prepared rice to this mix and sauté in ghee for about 3 to 4 minutes more. Don’t allow the rice to turn brown/over roasted.
  6. Place the lid on the saucepan and continue cooking for more 15-20 minutes till the water gets completely dried off.
  7. Open the lid: using a spatula give the rice a mix and keep it aside covered.
  8. Fry the onions in Milkio ghee until they turn golden brown: once done, transfer on a paper towel.
  9. Roast cashew nuts in the leftover oil until turn golden: keep aside on a paper towel.
  10. Roast Raisins in oil till it bubbles up, keep aside.
  11. Garnish the cooked rice with sautéed onions, roasted cashew nuts, roasted raisins and chopped cilantro.
  12. Keep the saucepan covered for a few more minutes.
  13. Serve rice warm with your favorite veg or non-veg dish.

Keto Burgers

Here are way you can incorporate ghee into your keto lifestyle:

Keto Burgers

• 1kg mince
• 1 tbsp keto-friendly steak seasoning
• 1 tbsp minced garlic
• 2 tbsp plain mayonnaise (homemade or store bought)
• 1 large yellow onion
• Ghee (at room temperature or slightly lower; enough for about 12 tbsp)
Keto-friendly burger buns (you will most likely need to make these yourself)

1. Combine mince, seasoning, garlic, plain mayo, and mix together.
2. Form into patties.
3. Create little pockets in the patties and fill each with one tablespoon of ghee, then form back into patties.
4. In a regular or cast iron pan, heat up 2 tbsp ghee over medium-low heat.
5. Add onions and let soften for about two minutes. Push the onions to one side of the pan.
6. Add the patties to the pan and cook on medium-low heat for about 20 minutes, making sure they stay flat.
7. When the patties are browned on one side, flip and add 1 tbsp of ghee.
8. Shuffle your onions throughout this process so they remain moist. Once they are cooked to your liking, remove them and set aside.
9. If you prefer, top the keto burgers with cheese and let melt. When cooked to your liking, assemble keto burgers with your favourite vegetables and keto-friendly buns, and enjoy.

Ghee Chocolate

Mix ghee and cocoa powder in a 1:1 ratio (example: 1/3 cup ghee and 1/3 cup cocoa powder). Add a keto-friendly sweetener (such as stevia) as desired. If you like, you may add sea salt, lime zest, or cinnamon before placing in the fridge to set.

Baba Ghannouj (Eggplant Dip) with Milkio 100% Pure Ghee

Baba Ghannouj is a tasty and healthy eggplant recipe, which is easy to cook and serve. In Jordan, Palestine, Syria, as well as in Lebanon, baba ghanouj recipe is made of eggplant blended with finely chopped onions, tomatoes, and other vegetables. The Egyptian type is made of baked, peeled, and mashed eggplant, mingled with tahini, garlic, salt, and lemon juice.

Ingredients:

  • 1 large eggplant,
  • Garlic: 2- 3 cloves,
  • Tahini: 60 4 Tablespoons,
  • Lemon juice: 4 Tablespoons,
  • Salt, red pepper: as needed,
  • Milkio’s pure ghee,
  • Parsley: chopped,
  • Slices of red bell pepper to garnish.

Instructions: How to cook

  • Cook the Eggplant in a hot oven or on a fork over the flame on a gas stove. Or preheat oven at 375 degree Celsius.
  • Puncture the eggplant with a fork on several points in its body and place the eggplant on the grill rack 5 to 6 inches away from the fire. Take 1 teaspoon Milkio’s cow ghee and smear the ghee on the eggplant.
  • When the eggplant gets well cooked and the skin gets blackened, now drench it with cold water, and slowly peel and chop it into small pieces after removing the black skin.
  • Mash two or three cloves of garlic to a paste with pinch of salt.
  • Add eggplant, mash it to a smooth consistency and blend the Tahina and lemon juice in it to make the Arab type of this dish; skip the Tahina for following Turkish convention.
  • Serve in a bowl with 2 teaspoon Milkio’s pure ghee on top and garnish with chopped parsley, red pepper slices, and sprinkling of red pepper.
  • Serve in room temperature.

Baba Ghannouj with Milkio Ghee, takes 45 minutes around to prepare the dish, and it is suitable for serving 5-6 people. Typically, it’s a cold or room temperature spread with rich, smoky, and creamy taste. It can be served with rice or bread.

Spicy Cauliflower Curry with Milkio Pure ghee

Cauliflower curry is a yummy veg recipe and can be cooked in different ways. However, it is a seasonal recipe and should be cooked in a way where the freshness of cauliflower and deliciousness of spices used in cooking can be enjoyed in a healthy way.

Ingredients needed for cooking Cauliflower curry

  • Cauliflower: 750 gram, chopped into florets,
  • 1 onion: thinly sliced,
  • 3 garlic: thinly sliced,
  • Cumin Seed: 1 teaspoon,
  • 2 Fresh Tomatoes: chopped quarterly
  • Curry leaves: 2 stalks,
  • Creamy milk: 125 ml
  • Lukewarm water: 100ml
  • Salt: as needed.
  • Milkio’s Ghee: 3 tablespoon.

Instruction for cooking

Preparing the florets for cooking

Take the florets in a pot and add water so that the florets get submerged in water. Put the pot on flame and cover it with a lead. Make the flame medium and boil the florets for next 5-7 minutes. Drain the water and keep the florets half boiled ready. Put slight Milkio’s Ghee on it and slight ping o sugar and salt on them.

Preparing the dish

  • Add Milkio’s Cow ghee on cooking pan and warm it against moderate heat. Once it is evenly heated, add Cumin seed, sliced garlic, and curry leaves and fry the ingredients until it becomes fragrant.
  • Now add tomato pieces and keep on sautéing the tomatoes against moderately low heat. Keep on cooking until tomatoes become soft and half cooked.
  • Now add water and milk in the mix and allow the mix to be shimmered for next 10 min against moderately low heat.
  • Now it’s time to add cauliflower florets: once the florets are added keep on stirring the entire mix gently so that the florets are well smeared by the mix already prepared in pan. Keep on cooking until the florets become tender.
  • Add Milkio’s Ghee before putting off the flame for slight on-pan seasoning.
  • Take care so that the gravy gets quite dense. If needed, you may add some water in it.
  • This preparation is for 6-7 people and estimated time for cooking 35 minutes.
