Ingredients or preparing the raw fritter
Plain flour: 170 g
Water: 230 g
Chili giling: 1 teaspoon,
Shallot: 1 large, sliced
Chili: 1 large sliced
Bean Sprouts: 20 g
Cabbages: 40 g, sliced
spring onions:4, sliced
minced garlic: 1 teaspoon,
Coriander root powder: 1/4 teaspoon,
Cumin powder: 1/4 teaspoon,
Salt and pepper: a pinch, as needed,

Instructions: for cooking vegetable fritters with Milkio’s Pure Ghee.
Mix flours, water, salt, chili giling: beat it evenly until the mix gets smooth,
Take chili, shallot, bean sprouts, cabbages, spring onions, garlic, coriander powder, cumin powder, salt and pepper all together and combine,

Cheese and Mushroom Ravioli cooked in Milkio’s Ghee
It is an easy to cook recipe where the freshness of mushroom Ravioli, taste of cheese and yummy seasoning of Milkio’s pure ghee will take to cloud nine for sure!
Ingredients needed for preparing the delicacy:
100 g Milkio Pure Ghee
4-6 chilli padies, you need to cut all of them lengthwise
Curry leaves: 1-2 stalks
Kaffir lime leaves: 5-6 numbers,
Meat curry powder: 1-2 teaspoon
Milkio Pure New Zealand Ghee: 2 tablespoons Milkio’s pure ghee
Button mushrooms: finely chopped: 200 g
Feta cheese: 150 g
Crumbled freshly ground pepper: 2 teaspoons or as needed.
Wanton sheets: 11-12 round
Corn flour mixed: 2 teaspoons mixed with 1 tablespoon lukewarm water
Instructions for preparingCheese and Mushroom Ravioli
Take 100g Milkio’s pure Ghee and heat the ghee under moderate heat. Fry the chilies, and curry laves until slight spicy aroma coms out of the mix. Now carefully strain the fried spices and let the oil be cool off the oven.
Now take 2 tablespoons of Milkio’s Ghee and start sautéing the mushroom against moderate heat with the ghee. Continue sautéing until mushrooms get soft.
Now place all cooked mushroom and cheese together in a bowl. Add fresh pepper on it and mix all ingredients together.
Now take a piece of wanton wrapper [Ref: https://en.wikipedia.org/wiki/Wonton]: place it on a plate for better convenience. Now you need to place 1-3 mushroom mix in the paper middle.
Now use a brush or your finger: you need to brush some corn flour solution around the wanton. Now carefully repeat the process for rest of the mushroom mix.
Falafel is deep fried veggie balls and it is prepared by using veggies like chickpeas and fava beans. It is an easy to prepare traditional Egyptian as well as Middle Eastern food. Usually it is served in Pita, which works as a pocket type wrapper for the balls. In UAE sometimes Falafel is served with flatbread called as taboon. In Middle East it is also known as Ta’amia. It is one of the most popular side dishes in UAE, which you can easily make in your kitchen.
Mixed beans: 1 x 400 g tin
Chickpeas : 1 x 400 g tin
Lemon: 1 piece,
Harissa: 1 tablespoon,
Allspice : 1 heaped teaspoon
Plain flour: 1 heaped tablespoon
Fresh coriander leaves: 1 bunch
Parsley: 1 bunch
Cumin powder: 3-4 tablespoon
For the sides
2 mixed-Color peppers
Onions: 4 spring
Whole-wheat tortillas: 8 small
Lingham’s chilli sauce : 1 tablespoon
low-fat cottage cheese: 250g
Pickled red cabbage- optional.
Soak the chickpeas and beans in two separate bowls with plenty of normal water. Leave them overnight in water. Drain and spread them on to a clean tea towel to dry in morning.
Place all the beans and half of the chickpeas into a food processor and keep on whizzing until the mix gets smooth: however take care of the load of your processor.
Now you can add parsley, coriander leaves, salt, hot pepper, garlic, cumin, and spring onions and whiz again, until all ingredients get well combined.
Finally, add the remaining chickpeas, fresh herbs, and pulse until thy get completely chopped and well combined, but not totally mashed – the mixture need to be clumpy with chickpeas.
Dash in the baking powder and 4 tablespoons of flour and pulse. Add sufficient bulgur or flour so that the dough can be formed in small balls and doesn’t stick to hands.
Put all the falafel balls into a bowl and place in a refrigerator, covered, for 3-4 hours.
Heat 5cm Milkio’s Ghee in a deep pan at 170C/350F temperature, then fry the falafel balls in batches and drain on kitchen paper.
You can make a side dip with all ingredients mixed and blended in mixer.
Serve Falafel balls with tahini sauce (Tahini is an oily paste made from ground sesame seeds. It is widely available in UAE grocery markets.), grilled flatbreads, and plenty of salad.
You may garnish falafel in authentic Israeli style also: use these condiments: Harissa hot sauce, pickled turnip, and sauerkraut.

Pour all the prescribed ingredients into a food processor. Keep on Blending until all get mixed and evenly combined.
Place some plastic wrap or parchment paper in a loaf pan to cover the bottom and sides of the pan.
Pour the chocolate mixture into the loaf pan and cover with the plastic wrap (gently).
Press down or tilt to even out the thickness. I like mine about 1/2 inch thick. You can also spread the mixture onto some parchment paper on a cookie sheet or roasting pan and put the pan in the fridge. This avoids the plastic wrap and works just as well.
Place the loaf pan with the fudge into the freezer and let it set for about 20 min. Remove and slice into bite sized pieces.
I put these in a jar and store in the fridge. I like to store in the freezer for a cold chocolaty treat!
