Chicken Rendang with Milkio Pure Ghee

One of the most popular Indonesian Chicken dishes in Thailand and throughout Asia is Chicken Rendang. It is a “dry” curry dish, which means the sauce is smoldered down to a minimum. The preparation is so distilled that the sauce sticks to the meat and it makes this dish flavorful. Wide varieties of spices are used and that makes thee dish yummy and healthy. Here goes the recipe detail for your try in kitchen:

Ingredients for chicken marinating

  • Chicken: 1.5 kg: cut into 12 pieces and washed with salt, rinsed well,
  • Coconut milk: 250ml
  • Water: 100ml
  • Salt: at par taste.

Ingredient for preparing ground:

  • Shallots: 4 cloves
  • Garlic: 4 cloves
  • Dry Chilies: 15 stalks
  • Meat curry powder: 2 tablespoons
  • Ginger: 1 thumb-size piece
  • Tamarind paste: 3/4 ttablespoon
  • Brown sugar: 1 tablespoon
  • Dark soy sauce: 2 Teaspoon
  • Fish sauce: 4 Tbsp.
  • Turmeric: 1/2 tsp.
  • Ground coriander: 1 heaping tablespoon.
  • Ground cumin: 1 tablespoon.
  • Cinnamon: 1 1/2 teaspoon.
  • Nutmeg: 1/4 Teaspoon.
  • Cloves: 1/4 Teaspoon.
  • Lemongrass: 2 tablespoon fresh finely chopped
  • Milkio’s Pure Cow Ghee: 3 tablespoons.

Instructions for the cooking

  • Heat Milkio’s Pure Cow Ghee in the cooking pot.
  • Once the ghee is heated, add all ground making ingredients in the ghee; slow down the flame and keep on sautéing.
  • Once the ground becomes tender and seems half cooked, add chicken pieces, start stirring gently so that the mix gets blended evenly with low flame for 5-7 minutes. Then add meat curry powder, water and milk.
  • Keep on stirring the rendang until the gravy gets slightly thickened.
  • Add salt according to taste.
  • Sprinkle with chopped turmeric leaves before serving your cooked Chicken Rendang. Sprinkle Milkio’s pure ghee 2 teaspoon as garnishing.

Ingredients:

  • 6-7 Teaspoon Milkio’s Pure New Zealand Ghee
  • 1/2 Kg boneless Chicken
  • 1/2 cup fresh creamy Yogurt
  • 1 Tablespoon Chilli powder
  • 5 Guntur Chillies
  • 4-5 Kashmiri Chillies
  • 1/2 teaspoon Turmeric powder,
  • 10 pods of Garlic
  • 1 inch of fresh Ginger
  • 1 Tablespoon Ginger & Garlic paste
  • 1 Tablespoon Coriander powder
  • 2 tablespoons Coriander seeds
  • 1 Teaspoon Pepper powder
  • 1 teaspoon Peppercorns
  • ½ fresh Lime juice
  • 15 grams of matured Tamarind
  • 1 tablespoon of Fennel Seeds
  • 1/2 teaspoon of Cumin seeds
  • 5 seeds of Fenugreek
  • 1 inch long Cinnamon Stick, and 4-5 cloves.

Instructions: How to prepare Chicken Ghee roast

Step 1:

  • Marinate the entire chicken with fresh creamy yogurt and add all spice ingredients.
  • Now keep the chicken aside and let the spices set into it.
  • Add some lukewarm water to the tamarind.

Step 2:

  • Take a pan and add 1 tablespoon of Milkio’s pure ghee on low flame.
  • Add in all the spice ingredients and roast them lightly until they start to cackle lightly.
  • Add one cup of water in it and start cooking on medium heat until the chilies get soft.
  • Allow the mixture to rest and get cool for a few minutes.
  • Now add the mix in a grinder and add the tamarind in the mix.
  • Grind the mix until it becomes a smooth paste.
  • Add some water if necessary to make the paste best possible smooth.

Step 3:

In a wok, start cooking the chicken without any oil/ghee; continue the cooking until its half-way done. Do not overcook.

Step 4:

  • Add 5 tablespoons of Milkio’s pure ghee and all the spices. Cook it against slow heat until the ghee comes up.
  • Now add salt as needed with the chicken pieces and start simmering until the gravy becomes thick and the chicken gets completely coated with thick gravy layer.

I feel like the weekend always zooms past, and even though I seem to spend a large portion of it cooking, I’m always left scratching my head as to what I should eat! This Sunday morning, after lugging back a bunch of groceries, I found myself hungry but yet bereft of any quick and easy foods. So, after perusing through my refrigerator, I reached the decision that a quick scramble with some eggs and veggies would be a good (and more importantly, QUICK) solution. Also, I had just picked up some fresh berries so they would be perfect as “dessert.”

I pulled out the veggies from my fridge – 4 baby bella mushrooms, a 1/4 cup red bell peppers I had left over from a previous cooking session and a handful of spinach leaves. I also spotted some left over deli ham. So, I chopped everything up, dropped a knob of butter into the frying pan and started sautéing it all.

Meanwhile, I quickly whisked 3 eggs and dumped them into a different frying pan with some butter. The trick for great tasting eggs is NOT TO OVERCOOK THEM!

To prevent overcooking, but also to have them be cooked in a reasonably quick time, I set the heat on medium, and kept on stirring, making sure the eggs were stirred up as soon as some got stuck to the bottom of the pan. It’s a bit labor intensive, but it makes for much better scrambled eggs.

After scrambling was complete, I turned off the heat, seasoned the eggs with a bit of salt and pepper and stirred in the sautéed veggies and deli ham. Now your scramble recipe is complete.

Al Harees Using Oatmeal ghee and Milkio’s Ghee

“HAREES” is a delicious meat based non-veg dish, highly popular in UAE during Ramadan. However, this Ramadan staple can be cooked anytime. It’s healthy, tasty, and extremely easy to cook, a porridge, which also works as a filler food. By adding oatmeal in it, you can increase its health benefits in a natural savory way. One of the great advantages of cooking Harees is your liberty to choose the meat: you can cook Harees with lamb, mutton, beef, as well as with chicken.

Ingredients

  • Oatmeal: 3 cups
  • 1 small onion: finely chopped
  • Cinnamon: 1 small stick
  • Water: 1.5 liters (6 cups approximately)
  • Salt: as needed
  • Black pepper: 1/4th teaspoon
  • Cinnamon powder: 1/2nd teaspoons
  • Milkio’s Traditional Ghee: 4 tablespoons.
  • Meat: chicken/lamb/beef (as opted)

Instructions for cooking

In a large pot, add the meat of your choice, and then add sliced onion, cinnamon stick, and water.  Bring the mix to boil and cook continuously until it becomes tender. This is the stock you have prepared, and once prepared, keep it aside.

Remove meat/chicken from the broth and finely chop the meat/chicken.

Now using a strainer, you need to drain the prepared stock into a large pot.  Add some ghee in the pot, let it be heated till it becomes completely translucent. It’s time to add shredded meat/chicken, the 3 cups of Quaker oats, salt, pepper, and cinnamon in the melted ghee.  Keep on stirring using a whisk.  Add more water if necessary but in slow process, not at a time.  Bring the broth to boil and keep on stirring in every 5 to 10 minutes.  You may add more boiling water if necessary.  You need to cook for about 40-45 minutes.  Now you can add 1-2 spoonful Milkio’s Ghee, stir, and then serve the dish.

(Note:  Be attentive while cooking Harees. You need to stir the item in every few minutes so that it cannot get stuck to the pot and get overcooked. The oatmeal content in Harees is prone to get overcooked easily, so you have to be extra careful.

Chicken Meatballs with Milkio Ghee

If you want to make yummy crispy chicken snacks quickly to give your loved one a grand surprise treat, perhaps chicken meatballs is one of the best recipe options you have in your hand. It is healthy, easy to prepare, and with Milkio’s ghee as frying medium, your cooking expertise will simply rock!!

Ingredients: the items you need to prepare the balls

  • Boneless and minced fat-free chicken meat: 500-600 grams,
  • Tapioca Flour: 3 tablespoons,
  • Garlics: 5 pips,
  • Shallots: 8 pips,
  • 2-3 eggs: slightly beaten
  • Pepper: ½ teaspoon,
  • Ginger: 2-3 cm
  • Chicken Granules: ½ teaspoon,
  • Lukewarm water: 6 tablespoons,
  • Milkio’s pure Ghee: 6-8 tablespoons.
  • Salt: as required.

Instruction for preparing chicken meatballs:

  • You need to pound garlic, ginger, and shallot together. Put your best effort so that you can pound them as fine as possible.
  • Now you need to mix all ingredients together evenly as best as possible, use a metal spoon preferably or mixing the entire ingredients.
  • Form small balls with the mix: take your best effort to make all meat balls symmetrical,
  • Now heat Milkio’s Pure Cow Ghee in fry pan, once the ghee is hot, turn the flame into medium range,
  • Add salt, pepper, and slight oregano herbs on it rather sprinkle on the fried meat balls,
  • Serve hot with sauce or you may serve the meatballs with hot chicken clear soup.
  • Before serving take one meatball, slice it, and check if the mix is well and evenly friend. Always fry in medium heat. It takes 3-4 minutes to fry each meatball. Fry until the balls become golden brown.

The quantity mentioned here are suitable for 6-8 persons, however, intake quantity may differ. It takes around 45 minutes to complete the entire preparation when meat is minced and washed properly.
