Ghee Rice is a globally famous dish, widely popular in UAE.

Extremely comforting and savory in taste, the recipe offers delicious aroma, which is refreshing as well as mild for digestive system. Basmati rice
2 cups
Ginger garlic paste
2 Tablespoons
Cardamom, cinnamon stick, cloves-3 pieces each
Fennel seed
1 teaspoon full
1, finely sliced
Lemon juice or vinegar
2 Tablespoons
Milkio’s Traditional Ghee
2-3 tablespoons
Curry leaves
Cashews and raisins
Fried sliced onion (for garnishing)


It takes few minutes to cook Ghee Rice. However, instructions should be followed step-by-step.

  • Heat some oil in a pan and fry finely sliced onion.
  • Add salt in half fried onion and keep stirring. Keep it on flame for some time and then squeeze the excess water from it. Repeat the action for twice. Keep it aside. This will be used for garnishing.
  • Now pour some Milkio’s Pure Ghee in the cooking pan and fry cashews and raisins. Keep them aside.
  • Clean and wash the rice and drain the water from it. Keep it aside.
  • Then take a vessel and pour some Milkio’s ghee in it.
  • When ghee will become hot, now add cardamom, cloves, cinnamon stick, and fennel seeds to the same pot. Sauté for a while till the flavor comes out….
  • Now add the sliced onion when done, add the rice to the mix and blend well.
  • Now need to add ginger garlic paste in rice and mix the same with the rice: let the cook in a low flame for 8-10 minutes.
  • Meanwhile, boil 4 cups of water (arrange water, double of the rice by quantity) in a separate pot.
  • When water in pot starts boiling, pour it over the rice. Mix well.
  • Add fresh lemon juice and salt in it.
  • Now Stir well and add curry leaves for adding special flavor.
  • Close the lid of the pot and cook in a low flame until entire water gets dried up.
  • Now Transfer Ghee rice to a serving plate: garnish the platter with fried onion, cashews, and raisins.

Ghee Rice needs to be served with side dish. Although it is a veg recipe, but it can be served with both veg and non-veg side dishes. It takes 45-60 minutes to prepare the dish

Baba Ghannouj (Eggplant Dip) with Milkio 100% Pure Ghee

Baba Ghannouj is a tasty and healthy eggplant recipe, which is easy to cook and serve. In Jordan, Palestine, Syria, as well as in Lebanon, baba ghanouj recipe is made of eggplant blended with finely chopped onions, tomatoes, and other vegetables. The Egyptian type is made of baked, peeled, and mashed eggplant, mingled with tahini, garlic, salt, and lemon juice.


  • 1 large eggplant,
  • Garlic: 2- 3 cloves,
  • Tahini: 60 4 Tablespoons,
  • Lemon juice: 4 Tablespoons,
  • Salt, red pepper: as needed,
  • Milkio’s pure ghee,
  • Parsley: chopped,
  • Slices of red bell pepper to garnish.

Instructions: How to cook

  • Cook the Eggplant in a hot oven or on a fork over the flame on a gas stove. Or preheat oven at 375 degree Celsius.
  • Puncture the eggplant with a fork on several points in its body and place the eggplant on the grill rack 5 to 6 inches away from the fire. Take 1 teaspoon Milkio’s cow ghee and smear the ghee on the eggplant.
  • When the eggplant gets well cooked and the skin gets blackened, now drench it with cold water, and slowly peel and chop it into small pieces after removing the black skin.
  • Mash two or three cloves of garlic to a paste with pinch of salt.
  • Add eggplant, mash it to a smooth consistency and blend the Tahina and lemon juice in it to make the Arab type of this dish; skip the Tahina for following Turkish convention.
  • Serve in a bowl with 2 teaspoon Milkio’s pure ghee on top and garnish with chopped parsley, red pepper slices, and sprinkling of red pepper.
  • Serve in room temperature.

Baba Ghannouj with Milkio Ghee, takes 45 minutes around to prepare the dish, and it is suitable for serving 5-6 people. Typically, it’s a cold or room temperature spread with rich, smoky, and creamy taste. It can be served with rice or bread.

Spicy Cauliflower Curry with Milkio Pure ghee

Cauliflower curry is a yummy veg recipe and can be cooked in different ways. However, it is a seasonal recipe and should be cooked in a way where the freshness of cauliflower and deliciousness of spices used in cooking can be enjoyed in a healthy way.

Ingredients needed for cooking Cauliflower curry

  • Cauliflower: 750 gram, chopped into florets,
  • 1 onion: thinly sliced,
  • 3 garlic: thinly sliced,
  • Cumin Seed: 1 teaspoon,
  • 2 Fresh Tomatoes: chopped quarterly
  • Curry leaves: 2 stalks,
  • Creamy milk: 125 ml
  • Lukewarm water: 100ml
  • Salt: as needed.
  • Milkio’s Ghee: 3 tablespoon.

Instruction for cooking

Preparing the florets for cooking

Take the florets in a pot and add water so that the florets get submerged in water. Put the pot on flame and cover it with a lead. Make the flame medium and boil the florets for next 5-7 minutes. Drain the water and keep the florets half boiled ready. Put slight Milkio’s Ghee on it and slight ping o sugar and salt on them.

Preparing the dish

  • Add Milkio’s Cow ghee on cooking pan and warm it against moderate heat. Once it is evenly heated, add Cumin seed, sliced garlic, and curry leaves and fry the ingredients until it becomes fragrant.
  • Now add tomato pieces and keep on sautéing the tomatoes against moderately low heat. Keep on cooking until tomatoes become soft and half cooked.
  • Now add water and milk in the mix and allow the mix to be shimmered for next 10 min against moderately low heat.
  • Now it’s time to add cauliflower florets: once the florets are added keep on stirring the entire mix gently so that the florets are well smeared by the mix already prepared in pan. Keep on cooking until the florets become tender.
  • Add Milkio’s Ghee before putting off the flame for slight on-pan seasoning.
  • Take care so that the gravy gets quite dense. If needed, you may add some water in it.
  • This preparation is for 6-7 people and estimated time for cooking 35 minutes.

Everyone likes fritters! When they are pan-fried and gets golden hued and offers crispy perfection on the serving plate, these vegetable fritters simply becomes irresistible. Even the most stubborn veggie-haters would have trouble turning down these recipes. Vegetable fritters fried with Milkio’s Pure New Zealand ghee will pamper your taste buds at its best that you will keep on licking your fingers!

Ingredients or preparing the raw fritter

  • Plain flour: 170 g
  • Water: 230 g
  • Chili giling: 1 teaspoon,
  • Shallot: 1 large, sliced
  • Chili: 1 large sliced
  • Bean Sprouts: 20 g
  • Cabbages: 40 g, sliced
  • spring onions:4, sliced
  • minced garlic: 1 teaspoon,
  • Coriander root powder: 1/4 teaspoon,
  • Cumin powder: 1/4 teaspoon,
  • Salt and pepper: a pinch, as needed,
  • Milkio’s pure Ghee for frying medium.

Instructions: for cooking vegetable fritters with Milkio’s Pure Ghee.

  • Mix flours, water, salt, chili giling: beat it evenly until the mix gets smooth,
  • Take chili, shallot, bean sprouts, cabbages, spring onions, garlic, coriander powder, cumin powder, salt and pepper all together and combine,
  • Now heat Milkio’s Pure Ghee in a frying pan: before you place the fritters in hot ghee to be deep fried, check if the mix is tight and ready for frying,
  • Once Fritters are placed in ghee for frying, turn your oven’s heat into medium range.
  • It would be better if you place few fritters at a time for frying, otherwise they can get over fried,
  • It take 4-5 minutes to get each vegetable fritters properly fried.
  • Now it’s time to place the fritters on serving plate,
  • Garnish the dish and enjoy the delicacy.
